While it may resemble the classic we all know and love in terms of flavor, texture and appearance, there are some key differences between this dish and traditional macaroni and cheese that you should know about! First let's talk about the pasta. If we're being honest, there isn't actually any "macaroni" in there. Instead, we use cavatappi- macaroni's better looking, spiral-shaped cousin. This pasta is made from chickpeas instead of wheat (though you can't tell just by eating it!) for a protein boost without the gluten, and no pasta shape gets along with sauce better than cavatappi! As for the sauce, well, we knew had to create a worthy companion for the perfect pasta, and so we did. There are over 1,800 varieties of cheese in the world with approximately 435,943,484,550 possible four cheese combinations (ah, the paradox of choice), but we narrowed it down to the four cheeses that we believe bring the right balance of flavors and textures to your taste buds.
